This is what I love to do with leftover meats of pretty much any kind. I asked my daughter if she wanted me to take leftover ham home from my in-laws Thanksgiving dinner and she shrugged, but then I said I’d make sandwiches and she was in. My family describes these as the most delicious sandwiches ever. This is a simple recipe for turkey sandwiches, but I’ve made these with pork loin, roast beef, ham and steak. The trick is the butter, garlic and pressing them. Seriously, you could pretty much put anything in the middle and still have the most delicious sandwich ever.
Makes 4 sandwiches
Ingredients:
8 slices of good french bread or 4 ciabatta rolls
1 large garlic, minced
1/3 stick, unsalted butter – melted
8 slices of turkey
8 slices of provolone cheese
8 slices of tomato
avocado (optional)
salt and pepper
Preparation:
Combine garlic and butter. Brush the inside of each bread slice with the garlic butter mixture. Layer your sandwiches in the following order: 1 slice of provolone, turkey, tomato, avocado (if using), salt and pepper, cheese. Then close up your sandwich. Use a panini press if you have it to press and heat your sandwich until the cheese is melted and the bread is toasted. Or use a griddle pan or any pan that can fit your bread (I usually have to do these in batches). If using this method, I use a flat heavy pot lid to press the sandwiches, when bread is toasted, flip and repeat.
