So if Cinco de Mayo would have landed on a weekend, here’s what we would have served at our party. But instead, we just enjoyed it ourselves with our good friends the Marine family for an early dinner so the kids could get to bed since it was a school night.
- Salsa
- Tortilla Chips
- Guacamole
- Refried beans
- Chile braised pork
- Cilantro Rice
- Flour Tortillas (I cheat and use Tortillaland tortillas – they come fresh and uncooked so you cook them at home)
What would we drink?
My favorite cucumber, jalapeño margarita. Here’s how you make it (we only had 1 tonight):
- 2 thick slices of cucumber
- 3 slices of jalapeño
- juice of one lime
- 1 tablespoon agave nectar
- 2 ounces silver tequila
- 2 ounces Cointreau
Muddle cucumbers, jalapeño, lime juice and agave together. Strain liquid into glass. Add tequila and cointreau and ice to glass. Garnish with cucumber and jalapeño slice.
