We still love brussels sprouts even though it seems like they are a bit overdone which means that we must actually love them. Here’s a great simple recipe that doesn’t require use of the oven – which is a big plus when cooking a big dinner with only one oven. You should let these brussels get a bit toasty to give them that lovely caramelized flavor.
Ingredients:
2 lbs brussels sprouts, washed, trimmed and halved
4 oz diced pancetta
3 garlic cloves, minced
2 tablespoons extra virgin olive oil
1 1/2 teaspoons sea salt
fresh ground pepper
aged balsamic vinegar to drizzle
Preparation:
Heat olive oil in a large pan over medium high heat. Add garlic and sauté for 1 minute, then add pancetta and cook for another 3 minutes. Add brussels sprouts, salt and pepper and sauté until brussels sprouts are nicely browned and tender. Transfer to a serving bowl and drizzle with aged balsamic vinegar.
