I made this to take to our Father’s Day Picnic at the park. Kids, dogs, good food, great friends, lots of wine and oh yeah, the fathers too! Since it was Father’s Day, it was a good thing my husband really liked this salad. He’s not usually a big chicken salad kind of guy, but the broccoli and red cabbage gave it a good crunch and the peanut dressing was a hit! My daughter loved it too. My son…not so much. But I guess you can’t please everyone all the time.
Ingredients
1 rotisserie chicken, skin removed and shredded
1 head of broccoli, cut into small pieces
3 cups shredded red cabbage
2 scallions, chopped
1/3 cup chopped cashews
for dressing
1/4 cup rice vinegar
1/2 cup vegetable oil
1 1/2 tablespoons roasted sesame oil
3 tablespoons soy sauce
1 garlic clove minced
1/2 tablespoon grated ginger
1/4 cup smooth, salted natural peanut butter
2 tablespoons honey
2 teaspoons sea salt
1/2 tablespoon toasted sesame seeds
Preparation
In a medium bowl, whisk together all the ingredients for the dressing and set aside. Then in a large bowl, combine all of the salad ingredients and toss the dressing in, mix well with hands to ensure all the pieces are coated with the dressing. Garnish with additional scallions and sesame seeds if you wish. Serve chilled or at room temperature.
