Proscuitto Wrapped Asparagus

Proscuitto Wrapped Asparagus

This is the one way I can get my kids to eat asparagus and not complain. It’s an easy dish to make for those of my friends who really don’t like to cook, but like to “assemble”. Serve it as an appetizer or a side dish. I took these to book club and the husband of the hostess said “These are awesome!”. Enough said.

Ingredients

1 lb of asparagus, washed and trimmed
6 oz proscuitto
1 tablespoon extra virgin olive oil
Aged balsamic vinegar
Sea salt
Fresh ground pepper

Preparation

Preheat the oven to broil. Dry the asparagus and toss them in extra virgin olive oil. Lightly season with sea salt. Wrap each asparagus stalk with 1/2 strip of proscuitto and place on a baking sheet in a single layer. You may need to do this in a couple batches. Be sure not to crowd the asparagus on the sheet. Put the baking sheet in the oven, about 6 inches from the top and broil for about 3 minutes. Remove from oven and flip. Return to the oven for 2 more minutes. Season with fresh ground pepper and drizzle aged balsamic vinegar. If you don’t have any aged balsamic vinegar, you can boil down regular balsamic vinegar until thickened. Transfer to a platter and serve.
