Truffles go so well with eggs, so why not truffled deviled eggs? To pair with the truffle flavor, I removed the traditional mayonnaise and used just creme fraiche instead.
Ingredients
3 hard boiled eggs
1/3 teaspoon truffle oil
2 tablespoons creme fraiche or sour cream
1/3 teaspoon sea salt
chives or scallions
truffle salt to sprinkle
Preparation
Cut hard boiled eggs in half lengthwise. Remove egg yolks and place in medium bowl. Add sour cream, truffle oil and sea salt and mash together until well combined and smooth. Put mixture into a piping bag with a large tip. Pipe the mixture into the egg white halves, sprinkle with truffle salt and chives and serve.
