My dear sister Mia Lee brought this over to my house one Thanksgiving and it was a huge hit. We do love our pork products in our house. I’ve made it a couple more times for parties and it always disappears in a matter of fifteen minutes. Makes 24 portions.
Ingredients
12 strips bacon cut in half vertically
5 scallions, cut into thirds and cut lengthwise to create long strips
1 pack enoki mushrooms cleaned and trimmed
Aged balsamic vinegar to drizzle
Fresh ground pepper
Toothpicks
Preparation
Preheat the oven to 425 degrees. place a small bundle of enoki mushrooms and a few pieces of scallions, ground pepper and place them on one end of a piece of bacon. Roll the mushrooms and scallion in the bacon and place on a baking sheet with the seam down. Keep closed with a toothpick if the roll doesn’t want to stay closed. Repeat until you run out of room. Bake in oven for 18 minutes or until bacon is browned but not too crispy. Repeat until all bacon is used. Blot each bundle on a paper towel to remove excess grease, then transfer to a serving platter. Drizzle with aged balsamic vinegar and serve. The aged balsamic should be thick and syrupy. If you don’t have any good aged balsamic on hand, boil down balsamic vinegar until it reached a syrupy consistency. You will get the sweetness but not the complexity of flavour.
