This is a great, brighter alternative to hummus. The lemon and mint make this a great summertime dip. You can also omit the cheese if you would like. Its great either way.
Ingredients
1 can chick peas, drained and rinsed
1 garlic clove minced
1 teaspoon fresh mint, minced
zest of 1 lemon
1/4 cup of extra virgin olive oil
1/2 teaspoon sea salt
1 teaspoon lemon juice
Preparation
Combine all ingredients into a food processor and blend until smooth. Serve with crostini or cut vegetables like carrots, celery and broccoli.
