This is my famous salsa recipe…well famous in my circle of friends. The chipotle peppers add a great taste and the addition of the concentrated chicken stock gives this salsa a depth of flavour. If you have time, you can also roast the tomatoes in the oven before adding them into the mix.
Ingredients
5 tomatoes, cored and roughly chopped
1/2 yellow onion, chopped
2 garlic cloves
1/2 teaspoon cumin
2 chipotle peppers (chipotle in adobo) plus 1 teaspoon of adobo sauce
1 jalapeño cored (remove seeds if you want it milder)
Juice of 1 lime
1/2 cup chopped cilantro
1 packet or 1 tablespoon of concentrated chicken stock
sea salt and ground pepper to taste
Preparation
Combine all ingredients in food processor. Season with salt and pepper to taste. Serve immediately or cover and refrigerate until ready to serve. This salsa will just build in flavor.
