Galbi – Korean Barbecue

 

Galbi is the a Korean marinated short rib and is what most people in the U.S. associate with Korean food. This version is LA Galbi because it is a different cut than they have in Korea. With Los Angeles being the largest Korean population in the US, the name LA Galbi just came to be. Everyone has their own slightly different variation on this recipe as the recipes are passed down from generation to generation. This one is not my mother’s recipe but one that I like better…sorry mom.

Ingredients

2 1/2 pounds beef short ribs cut “LA-style”
1/4 yellow onion, chopped
1/4 Asian pear, peeled and coarsely chopped
10 garlic cloves peeled and smashed
1 tablespoon chopped ginger
1/4 cup brown sugar
1/2 teaspoon freshly ground black pepper
1/2 cup soy sauce
1/2 cup cola
1/4 cup soju or sake
2 teaspoons roasted sesame oil
1 tablespoon roasted sesame seeds
4 scallions, thinly sliced

Preparation

Rinse the short ribs in order to get off any bone fragments. Pat dry with paper towel. Combine the onion, pear, garlic, ginger, brown sugar, soy sauce, cola, sesame oil and sake into a blender and puree until smooth. Transfer to a large bowl and add in scallions. Add in meat and ensure each piece is coated well with the mixture. Cover the bowl and refrigerate overnight.

Heat grill and cook until each piece is nicely caramelized on both sides about 1-2 minutes per side.
