This is a great one-pot meal. Hearty with sausage and beans, the addition of spinach provides the greens you need in your diet. I add orrechiette to this soup for the kids. We like to keep it without the carbs for a satisfying low carb meal.
Ingredients
1 tablespoon extra virgin olive oil
1 onion finely diced
3 cloves garlic, minced
1 teaspoon smoked paprika
4 sprigs of thyme
3 cans chick peas drained and rinsed
1 lb spanish chorizo or linguica sliced
6 oz spinach
4 cups chicken stock
Grated parmesan
sea salt
Preparation
Heat olive oil in large pot. Add onions and sauté until translucent, about 7 minutes. Sprinkle a pinch of sea salt to onions when cooking. Add garlic and smoked paprika and sauté for 1 more minute. Add chorizo and thyme and brown for 5 minutes. Meanwhile, put 1 cup of garbanzo beans in blender with about 1/4 cup of chicken stock and blend until smooth. Add blended garbanzo beans to pot and cook for 1 minutes. Add in chicken stock and remaining garbanzo beans and bring to boil. Then simmer for 20 minutes. Add spinach and cook for 2 more minutes. Serve with grated parmesan.
